Frozen veggies… frozen meals… oh my!

Every day I hear the same thing from my kids… “What’s for dinner?” Of course I follow with some vague answer like chicken or whatever meat we’re having and then they reply back what kind of chicken… what else are we having… and so on. Now, if it’s one of those rare weeks where I actually took some time to do some menu planning for the week they can just look at the plan that I leave on the fridge.

No matter what we have for dinner I always try to make it as healthy & balanced as possible (just don’t stop by on the really busy nights where I make pizza rolls or something terrible like that). Dinner always includes veggies no matter what, like salads and a warm veggie like steamed corn, peas, sauteed spinach, or green beans. I try to throw in something new once in a while to see what I can get away with like creamed spinach (they hated it), kale (it went over so – so), and rutabaga (I love it & a couple kids like it… husband refuses to touch it).

More often than not I resort to frozen veggies that I know they like and steam them. There are fewer faces from everyone when I bring it to the table.

Yes, frozen veggies! Why not fresh? Well, they’re fast, easy, always available, and they’re just as nutritious and delicious as the fresh ones. And I’ll be honest… I do buy frozen meals in addition to the veggies. I find that they’re super easy to bring with me to work and help with portion control!

Oh my! The Crustless Chicken Pot Pie is amazing! It’s a good thing that it was just a single serving or I would have eaten so much more. It was full of veggies, chicken, and tender dumplings and had a light sauce that you mixed in after it’s done cooking.

Doesn’t that look great? Yea… I added a bit of pepper to it, but I add pepper to just about everything that I eat. It tasted like a freshly made pot pie and nothing like that old frozen meals that were blah… bland… and tasteless.

Alphabet Photography {Review}

My kids have been bugging me forever to get some artwork on the walls in our house and while I agreed that we needed something I just couldn’t decide on what. I wanted something unique, something special, and most importantly something that would go with the furniture no matter what it looked like.

I tried forever to get a picture of it on the wall but it was either to dark, the flash was leaving a flare on the glass, or you could see my reflection in it. I finally took it off of the wall and propped it up on a chair and took about 5 more before I got one that was half way decent!

I can’t wait to get our family pictures back and start decorating around my awesome new artwork!

Bloggy Bootcamp Chicago in Pictures

This past weekend I was lucky enough to be able to attend Bloggy Bootcamp in Chicago. It’s my SITS day!!

Alright so if you didn’t guess by the title of my post today then I’ll say it again…. It’s my SITS day!! That deserves a double #WOOHOO and then some! To say that I’m pretty excited about this is an understatement! I’m above the top excited! Doing flips excited! Screaming from the rooftops excited!

You know what SITS is right??? They’re a community of over 9000 women bloggers who support one another through their blogs (commenting…. and lots of it), education, and of course by being the featured blogger or by being the SITS girl in the spotlight. If you’re unsure of which community you should join when first starting out in the blogging world I would highly recommend this one!

Hmm…. what can I tell you? I know… I’ll make a list!

  1. I’m a wife to a pretty great guy and we’ve been married for just over 4 years. It’s been an amazing ride so far and I can’t wait to see what the rest of our lives brings us.
  2. I am a mom to 4 pretty amazing kids! 3 girls… Caitlin 15, Natalie 11, Lauren 9, and Andrew 18 months (Yup, I started over again!)
  3. I work full time outside the house as a product owner managing projects in a software development company….. Yes, I work with programmers all day long.
  4. My dream job is doing something in social media where I can work from home where I can spend more time with my kids.
  5. Blogging is awesome…. actually it’s more the interacting with all the great people that I’ve met through blogging. I’ve learned that no matter what I’m not alone and that there is always someone there to help me out.
  6. I love to cook and bake. A lot. I don’t focus very much on that here on my blog, but I have just started posting a new recipe regularly on Monday’s.
