Have a HoneyBaked Easter!

Easter hasn’t always been one of my favorite holidays for one reason or another. But what I do like about it is that it’s the one meal where we always have delicious ham and scalloped potatoes. It’s so warm & comforting and I could eat it at least once a week.

Of course we will have ham this Easter, but I didn’t save my amazing HoneyBaked ham for the upcoming holiday. Instead, I decided that I would I served it at my daughter’s 12th birthday party.  Our birthday parties always include lots of family in addition to a few of the kids friends and instead of the traditional birthday dinner of pizza or sloppy joes I decided to change things up a bit.

I went all out and served a HoneyBaked ham, potato salad, fruit salad,  and baked beans this year. Everyone loved it! Even the kids. It really was a simple (I’m all about making things easy and simple) meal to prepare since the ham is already cooked and sliced for me. The hardest part was keeping all the fingers from grabbing ham as I was putting on a platter for the party. “Mmm… ham”, was often heard when my kids snuck a piece.

I think that it made my daughter’s birthday party a little extra special this year too.

I’m not sure what makes HoneyBaked ham so special. Microsoft 365 Review & Giveaway #GetItDone

With the holidays fast approaching getting things done and keep up with blogging can become a challenge. But I think that I might have a way to keep organized, make notes, and write blog posts on the go no matter which computer or device I’m using. Are you intrigued?

With Office 365 I can write a start a blog post on my phone while driving to to and fro (not me driving… that’d be unsafe!) and when I get home finish up on my computer (either the Mac or Windows computer). Once I have it all edited I can toss it into WordPress and be on my way to the next event… or bed… or work.

Or with One Note I can collaborate with my sister in Virginia on the menu for our family Thanksgiving this year. As well as make plans for our Black Friday shopping… where to shop, what we need, and of course mapping out all the coffee shops for my sister. Honestly, I don’t think that there isn’t much that we won’t be able to do with Office 365 to help us get through the holidays this year.

Office 365 lets you work while on the go. No matter where you are and when you save something to the cloud on your Sky Drive you can then access it on any device that you have Office 365 installed on. Life just got easier too, because with one subscription you can put Office on up to five PCs or Macs and five phones (iPhone or Android)!

I was a little sad when I saw that they didn’t have an app for my iPad but I have hope that they will soon.

 
This is especially useful since the 9 to 5 has blurred and today people need modern technology to find balance. From the home to the office, and especially on the go, people all around the world are working differently than the past. Even where I work more and more people are starting to work remotely and still collaborate on projects.

I find myself working on various documents, checking email, and making notes no matter what time of the day it is. Especially in the evening after the kids have gone off to bed for the night and it’s quiet. That’s when I can really make some progress!

Creamy Pesto Pasta Salad – #SummerPastabilities Recipe & Giveaway

Summer time is a time for cookouts, picnics, and one of my favorite things… pasta salad. Actually, pasta in general is one of my favorite things warm or cold, topped with a vinaigrette, smothered in cheese, or mixed with my famous tomato sauce. It’s one of the perfect foods out there that you can eat year round and every one in the family loves. You know…. now that I think about it I have never met anyone that doesn’t like pasta.

I took one my daughter’s favorite things, pesto sauce, and created a summer pasta salad with it. Something light and full of fresh seasonal veggies. But pesto alone wasn’t going to cut it and I knew that it would need something a little more to cut the sharpness of the flavor, especially if I wanted everyone to eat it at dinner.

Adding something to the pesto to make it a little creamy was exactly what it needed. Instead of the typical mayo or salad dressing that tend to end up in pasta salads I used Greek yogurt to help lower the calories, add a zing to it, and of course the creaminess that I was looking for.

Creamy Pesto Pasta Salad – #SummerPastabilities

Ingredients

  • 10oz box of Hodgson's Mill pasta (I used bow ties)
  • 6oz container of 0% (low fat) plain greek yogurt
  • 4oz prepared pesto - I bought a 6oz jar and used about 3/4 of it
  • 1 small red onion - diced
  • 1 zucchini - sliced
  • Cherry tomatoes sliced - I used about a dozen or so
  • Freshly grated parmesan cheese

Instructions

  1. Cook the pasta according to the instructions on the package. Make sure that salt the water though because this is the only chance that you get to season the pasta and yes, it does make a difference in the taste.
  2. In a small box mix the pesto and yogurt together.
  3. When the pasta is cooked drain it and run cool water over it for a minute.
  4. Pour well drained pasta into a large bowl and gently stir in the pesto dressing.
  5. Mix in the veggies carefully so you do break them up.
  6. Top with some parmesan cheese when you serve it.

The veggies in this can be mixed up, changed, and eliminated all together if you want.

This creamy pesto pasta salad was a hit! My daughter absolutely loved it and I’m sure that it’ll all be gone before I get home from work tomorrow too.

Kalahari Summer Splash Giveaway

Summer in full swing around here… well, it was for about a week and since then it’s been pretty chilly and more than a few of us here in Michigan are wondering if fall has come a little early. I won’t complain (to much) because fall is my favorite time of the year and to be honest I don’t like the 90 degree temps with 100% humidity.

I love traditional Mexican food and the stuff that I normally find in the store just doesn’t cut it. It tastes just all the other products on the shelf and there is nothing fresh or unique about it. As much as I love to cook I have yet to master delicious Mexican food.

I recently had a chance to check out Del Real traditional Mexican food and I was a little hesitant and figured that it would be similar to what I’ve found in stores before. I could not have been more wrong! Everything that we tried was incredible. From the tamales to the carnitas everything was fresh tasting, spiced perfectly, and there was nothing about it that seemed fake.

The first thing I did after checking out the food was to find the nearest location that sold Del Real food…. there is nothing within 50 miles that sells it. 🙁

Dark Dawn Giveaway

It’s no secret that I love reading and when I find a new book or author that I really like I want to share them with everyone so they can enjoy them as much as I do. Well, this is another one of those occasions and that book is Dark Dawn by Melissa Brodsky and Nicole Andrews Moore.

Through blogging I met Melissa Brodsky and had the chance to meet her in person this spring. What I didn’t know though was what an amazing writer she is! I had the chance to read one of her books… which totally left me hanging and I can’t wait for the next one. But I also have the chance to share this one with you and give you the opportunity to win some amazing prizes!

In the beginning God made the heavens and the earth, and everything in between. The In-between was unplanned, unexpected, and

So they fell. Falling was the easy part.

I am in the middle of reading the book and it’s simply amazing. I love the fantasy aspect of the book and how it’s intertwined with God’s creation of Earth, Adam, Eve, and well you get the idea. Besides, I’m only half way through and don’t want to give too much away.

Angry Birds Star Wars Review & Giveaway

I was given the Angry Birds Star Wars AT-AT Attack game to review… all thoughts are entirely my own and those of my family who played with it a heck of a lot more than me.

Yes, I’ve seen every single Star Wars movie more than once and yes, we own them too. Well, just the original ones because they’re the ones that are actually the best (I know that statement might stir up some reactions…) and to age myself when the Empire Strikes Back came out for the first time way back in … 1980-something I was there in the theatre watching it. I loved the Ewoks!

Coming up this weekend is Star Wars Day! Did you know that?

May 4th is Star Wars Day… May the 4th be with you…. is considered a holiday to celebrate the Star Wars movies.

Here’s a bit of info that I be you didn’t know. The six live-action movies of the Star Wars saga debuted in May (starting with the original Star Wars on May 25, 1977) and this year, May 25 marks the 30th anniversary of Return of the Jedi. The month of May includes George Lucas’ birthday (May 14, 1944), and has been the traditional start date of the popular Star Wars Weekends at Walt Disney World Resort (this year, the fun begins on May 14).

Will we celebrate by watching the movie? Maybe if I remember but I know that we’ll be playing the new Angry Birds AT-AT Attack Battle game!
